St Florian's Brewery

Let's drink to the hero in all of us!

In the face of danger, firefighters turn to St. Florian for protection.  Our very own Fire Captain-Brewmaster suffered only minor burns while on the job at one unfortunate fire scene.  Our family gives a thumbs-up of gratitude to St. Florian for safeguarding our hero from worse consequences.  Others aren't always as lucky.  We have taken that fateful night as a sign to pursue our dreams and open St. Florian's Brewery.  As a reminder of how fortunate our family is, we heed the call to respond to the needs of fire-related and community-based organizations in an effort to provide a better future to the common good.  May St. Florian protect us in this venture, which we brewed up in his name.

ST. FLORIAN IS THE PATRON SAINT OF FIREFIGHTERS. OUR BREWERY DONATES A MINIMUM OF 5% OF OUR BREWERY PROFITS TO FIRE-RELATED & COMMUNITY-BASED ORGANIZATIONS.

St. Florian's Brewery Tap Station is located on premise at our brewing facility in the industrial area of Windsor: 7704A Bell Road (off Conde Lane at Cameron Drive, by the soccer fields, around the corner from Russian River Brewing -- off Highway 101 between the Shiloh & Main Windsor exits).

ST. FLORIAN'S BREWERY BEERS

When asked what distinguishes St. Florian's from other breweries...one characteristic always stands out for us above others: BALANCE!  As our local firefighter, Aron operates on adrenaline day in & day out...when he leaves his firehouse to return to the brewery, it seems only natural that he'd seek balance & moderation.  As our brewmaster, Aron exemplifies balance as he crafts beer.  Whether in or out of the firehouse, brewhouse, our house, or your house, every day is entirely unique.  Thus, we craft a range of beers to suit any given day: light, dark, hoppy, crisp, sour, barrel-aged.  We hope that everyone will feel welcome and find something in our line-up to suit their personal palate.

ST. FLORIAN'S BREWERY CORE/FLAGSHIP RELEASES

48/96®

"48/96" references a typical firefighter's schedule: 48 hours on-duty, followed by 96 hours to recover from a rigorous shift.  48/96 drinks like a pilsner with "oomph", a slightly hoppy blonde ale, a flavorful cream ale, or a pale-pale ale; a very light, crisp, lager-esque beer with enough body to cleanse your palate.  A quintessential beer to refresh you during your time "off-duty": Single-hop Citra session ale with a touch of rye at 4.8% ABV.

PAIRS WITH Baseball games, mowing the lawn, a day on the lake, basking by the pool, happy hour, BBQs…  an anytime, anywhere craftbrew that pairs with (virtually) anything you do during your time off…

ST. FLORIAN’S BREWERY CALIFORNIA COMMON

A lager fermented at ale (warmer) temperatures.  It represents the best characteristics of both of these styles: the rich, malty body of an ale balanced with the crisp, clean, refreshing flavor of a lager.  St. Florian’s Brewery California Common rounds off with mellow fruitiness & an underlying earthy hoppiness.  Native style to the San Francisco Bay Area.  6.0% ABV & 35 IBUs

PAIRS WITH Barbeque & spicy cuisine, oysters, lamb chops, tangy cheese, sushi, bread pudding… just about anything (especially the quintessential San Francisco treats: crab, clam chowder, sourdough bread, cioppino, & on)!

FLASHOVER® IPA

An “East Coast meets West Coast” Style IPA.  East Coast IPAs are historically on the malty side.  And, the typical IPA motto on the West Coast: “the hoppier the better”.  Flashover IPA represents both styles in a well-balanced, easy-drinking brew with a citrus overtone: very hoppy with a malty backbone.  7.3% ABV & 75 IBUs

PAIRS WITH Burgers, sausages & most other meat; salty or fried food; pizza; spicy cuisine: curry, Thai, Mexican; chocolate & other savory desserts.

ST. FLORIAN'S BREWERY LIMITED & SEASONAL RELEASES:

BACK TO THE RIND IPA

Our grapefruit IPA brightens your day with zesty, robust grapefruit flavor.  Brewed with citrusy hops and topped off with grapefruit zest, you might just wonder whether you're even drinking a super hoppy IPA.  If you like grapefruit and citrus notes, try it (even if you're no hophead)!  7.5% ABV & 75 IBUs

PAIRS WITH Anything you'd wash down with grapefruit juice (and then some...)...

ST. FLORIAN’S BREWERY BROWN ALE

An English-American hybrid Brown Ale built upon English & American hops, and English yeast.  While most Brown Ales tend toward bitter or sweet, this ale glides over your tongue perfectly balanced between those flavor profiles with a surprisingly light, palate-cleansing body.  6.0% ABV & 22 IBUs

PAIRS WITH Stews, corn, hamburgers, rich desserts, dark meat, earthy vegetables, nutty or mild cheese, any meal you’d drink a rootbeer or cola with…

ÜBERSCHLAG® IPA

A big IPA fermented with Belgian yeast, but we don't necessarily call this a "Belgian Style IPA" (first: it's much more fun to say "Uberschlag" & secondly...).  We hold back the yeast so as to richen up the body and add some sweet fruity notes & spicy notes to Uberschlag.  The Belgian aspects don't overwhelm the IPA, they soften up the hops and add their notable characteristics to the complexity of the beer.  7.3% ABV & 75 IBUs

PAIRS WITH Sharp or tangy cheeses, such as apricot stilton or aged cheddar; rare meats, carpaccio, or prime rib with horseradish sauce; spicy Thai dishes; crème brulee.

BELLA ROSA ENGINE STOUT

Our friends at Bella Rosa Coffee Company of Santa Rosa roast beans with an innovative process, producing beans with a remarkably low acidity level.  Their Roasters Reserve is featured in this stout, which accentuates smooth coffee notes.  6.5% ABV.

PAIRS WITH Bleu cheese; carne asada torta (loaded with guacamole and jalapenos!); salted caramel ice cream.

BOMBEROS BROWN

A variation of our Brown Ale, barrel-aged in local bourbon barrels, from Prohibition Spirits in Sonoma, for approximately 7-to-8 months.  During aging, the ale takes on the barrels’ vanilla & smoky oak tones.  6.0% ABV

PAIRS WITH Cigars & bonfires, BIG steaks & burgers.

EXTREME CONDITIONS DOUBLE IPA

Extremely juicy.  Extreme levels of Amarillo, Citra & Mosaic hops; yet true to St. Florian’s Brewery tradition, we maintain a threshold of balance which won’t put your palate under duress.  9.4% ABV & 94 IBUs

PAIRS WITH Carbs (got to load up to absorb the 9.4% ABV): pizza (especially thick crust Chicago style); noodles (pesto pasta, lasagna, pad thai, ramen...); loaded baked potatoes; rice bowls; corn on the cob;  potato chips; fruit salad.

MUTUAL AID

A New England Style Pale Ale.  This quaffable, juicy ale is slightly hazy, very juicy with a very slight bit of hoppiness.  Azacca and Mosaic hops add the juicy notes, and yeast traditionally used in a popular Vermont beer attains the haze.  Mutual Aid is the act of providing neighborly assistance during times of need.  Mutual Aid originated as a refreshing collaboration with our friends at Bear Republic Brewing Company as a fundraising effort during the October 2017 Tubbs Fire.  This beer is virtual love & sunshine in a glass.  6.0% ABV & 37 IBUs

PAIRS WITH Any day that warrants a little extra love & sunshine (we all can use that!).  This ale is truly versatile, building a fan base amongst light beer & lager drinkers, cider drinkers, those who reach for sour beers, hopheads who rave about juicy IPAs, folks who dig wheat beers... thus, it pairs with a very broad variety of cuisine.

WINEY SIREN

A variation of our Brown Ale, barrel-aged in local red wine barrels, from Malm Winery in Healdsburg, for approximately 6-to-7 months.  During aging, the ale takes on the flavors naturally found in the barrels, with a slight inflection of tart pucker.  It reflects the bright flavors of the fruits of our Sonoma County vines, with 6.0% ABV.

PAIRS WITH Green salad with cranberries & vinaigrette; pork with fig reduction sauce; roasted duck; short ribs; dark chocolate lava cake; tart cherry pie,
